I use heavier fabs for bags and sometimes for quilts -- if it's a "toss on the floor" type.

I use heavier fabrics mostly for bags. Or if I have beautiful cottons that I want to use for a bag I will sometimes put something heavier (like denim) between the cottons to add strength. I have some fabrics from when I used to sew clothes that work well for that.

I tend to use heavier fabrics for things that are going to go through a bit more wear and tear- bags/totes especially. But I don't really follow rules or limit myself. I'll add interface to lighter weight fabrics if I just have to have that particular print. And I'll use all types of different fabrics in a patchwork project.
